INJECTOR

We use the Cajun Injector to inject our meat. The Cajun Injector is an inexpensive unit that is very efficient.  We have tried the more expensive $30 models. Dont buy those for this type of task! They all do the same thing. They inject. However, the outcome is sometimes worse. The larger commercial models have heavier duty needles which are capable of injecting more fluid in one spot. If you inject too much fluid in one spot of your brisket, you risk having stains in your meat when you slice it. The taste is fine. However, we are concerned with the appearance of the final product. Bottom line, buy the cheaper model! 

Chimney Starter

The staple fire starter.  Beware of cheap initiations that sell for half the price. Do you really wanna skimp on something that holds 1000 degree chunks of hot lava? Buy the original and buy it once.

Smoking Wood

We could spend day on smoking woods, but since we are just Patio Pimasters, we won't.  A combo of apple ad hickory is always a crowd pleaser. We have used some extotic wood like Guava and have had amazing results. Mesquite can be overpowering and shoukd be used with caution.

Wireless BBQ Thermometer 

We can't say enough about this little device. When you can cook overnight while you are sleeping and you are not worried about your pit temperature, you know this thing has paid for itself.  Make sure to get this newest model.  Older units had on/off switch underneath the batteries and people hated it.

Again, let the reviews for this much needed toy do the talking.  We have seen $10,000 BBQ trailers using this same thermometer.

Polyethylene Cutting Board

An oversized cutting board is a Patio Pitmaters best friend. We not only cut on ours, but we use it as an extra counter. You can find these at restaurant supply stores, but they can be very expensive.  We have and use this one and it does the trick.

Forschner 6" Boning Knife

The right tool for the right job is a mantra that is stuck in our heads.  If you attempt to trim a brisket with a chef's knife or a serrated bread knife, you are not going to be happy with the results. A boning knife is a great addition to you kitchen and cnce you have you will be amazed at how much you use it. We highly recommend this cheap, but quality boning knife.

Unlike the must have boning knife, this is a nice to have knife, but not a must.  If you aspire to be a Patio Pitmaster that does brisket once a week, you need this knife.  If brisket is a once a year cook for you, you can get away without having this knife.

Rib Rack

After you are comfortable with BBQing 2 to 3 racks of ribs, you will undoubtedly want to load your smoker up with ribs from an entire family of pigs and invite over the entire block.  If you do, a rib rack (or two) is needed to get the job done. These handy devices can double or even triple you cooking capacity.

BBQ Food Gloves

When pulling a hot pork butt or brisket off the BBQ these gloves are great. When you need to move a rack around from top to bottom, nothing works quite as well as your own two hands.  Unfortunately, if you used your two bare hands, you would not be a Patio Pitmaster for very long. These BBQ gloves are great to have and we use them so often, we feel lost when were cooking without them. Pulling your pork has never been easier with these glove on.
